11 week initiative, day 5. Kelp noodle recipe, smoothie recipe, Almond Butter Dressing & cupcake e-book,

It has been a good but cold Wednesday here. I am ready for some real sunshine. I started the day with a 5 mile run and some lower body weight lifting at the gym. I came home and made a green (it came out brown) smoothie with...

Fruity Cinnamon Smoothie

1 pear
1 banana
1 mandarin orange
carrot juice
2 huge handfuls of beet greens

It hit the spot and kept me full until lunch. For lunch I packed a green salad with lots of veggies an d hemp seeds.

 and a raw bar... have you heard of this one? It is really good, crunchy but chewy at the same time, and only 150 calories, which is low for a raw bar.

For dinner I marinated some kelp noodles in a mix of nama shoya, garlic, ginger juice, and chinese 5 spice powder.

I topped the noodles with bean sprouts, and lots of other raw veggies and topped with an almond butter dressing, original recipe adapted from Averie at Love Veggies and Yoga.I use...

Almond Butter Dressing

2 tablespoons almond butter
1 tablespoon ginger juice (or grated ginger)
1 teaspoon garlic
2 tablespoons sesame oil
1 tablespoon apple cider vinegar
juice from one large orange

For dessert I am going to have my first raw cupcake! (losing my raw cupcake virginity!)

I'm sure many of you are aware of Shannon over at Rawdorable and the cupcake e-book she has created. After seeing so many of her yummy looking creations I knew I had to buy it. Today I got the time to create one the recipes. I chose to do the "lighter" recipe since I am doing the 11 week initiative over at Raw Food Rehab. The recipe was super simple to follow and came out perfect! The things I love about this e-book are...

The recipes are for 1 or 2 serving, which I LOVE because I don't usually like to make big batches of things... back to that liking variety thing (and I know that it is highly possible I will eat them all!)

The book is fun to read and look at, full of pictures and brightly colored.

If you like raw sweets (who doesn't?) that are easy to make, so should go to Rawdorable and pick up Shannon's e-book now. Also, I think Ellen would LOVE any of the cupcakes in your book Shannon!

The verdict... the cupcake is DELICIOUS! I split it with Mackenzie and she loved it too and asked for more before she was even done. Great job Shannon! Thanks!

    I've been thinking about buying that ebook but I've held back because I'm wondering if the recipes are heavy and nutty/seedy. For example, most raw chocolate cakes are way too dense/heavy for me. When you say "Light", was that light on calories or a light texture/heaviness? Can you tell if the rest of the recipes look heavy? Thanks in advance!

    That's funny that it looks as though you have the same granite countertop as my mom. You have good taste; I picked it out for her.

  3. Oh, I also figured I'd answer Angelique's question about the nuts and seeds.

    Yes, it is rather nut and seed heavy, but I don't intend for unbakers to eat these treats everyday. I also mention in the tips and tricks section how you can alter the basic recipes to suit your own tastes.

    You can substitute some or all of the nuts in the recipe with nut pulp leftover from making your own nut milk. It gives the cupcake a lighter texture. I prefer to mix of both finely ground nuts and pulp to achieve the best flavor and texture.

    The reduced fat cupcake replaces some of the nuts with raw oats.

    I just figured I'd give you the info in advance, so you don't make a purchase you are dissatisfied with.

  4. Angelique, looks like Shannon did a good job of answering your question. I'll just say that most raw desserts are nut heavy, but as Shannon said in the lighter (lower fat content) recipe some nuts are replaced with oats. This works perfect and I don't see why it could not be done for most of the recipes.

    As with most raw desserts, they are not low fat, but eating just one will leave you satisfied. I kind of felt like a kid again, can't tell you the last time I had eaten a cupcake... they are just fun.

    Shannon also gives lighter frosting (the one I made was fat free)recipes so you don't have to have a nut based frosting.

  5. Ok, I am loving every single thing about this post! Cinnamon smoothie (I LOOOOOOOVE CINNAMON!!!), veggies with hemp seeds, Raw Crunch bar (what?! new item!), and Mmmm, kelp noodles! And cupcakes! Raw cupcakes at that! I just bought Sannonmarie's cupcake e-book too! Can't wait to try them out!

Thanks Shannonmarie and Sarah for the dense answers (ha, just realized how that sounds! no insult intended! :) My body does rebel any time I eat a lot of nuts but I like hearing there are substitution ideas, and just from the pix I've seen on Rawdorable, I know I'll love looking at the pix of how they're decorated. I might just get that ebook! Thanks again for your honesty, it's appreciated!
